A little glimpse into my daily life
“I love sleep, because it’s like a time machine to breakfast!”
I have always been the biggest breakfast person! I can not live without my breakfast (my nearest can agree with me on this one). If I don’t eat in the morning, I don’t feel my happy myself for the rest of the day. To me, my breakfast is the number 1 most important thing of the day.
Lately I have been loving trying out new breakfast recipes, and thought I wanted to share my newest obsession with you all. It’s something you’ve 100% seen around, many many times – but I love it, and it’s so incredibly easy to make, and it offers a big number of incredible nutritional benefits. If you haven’t tried it before, it might have a bit of a funny texture to you in the beginning. But give it a try, I am sure you will love it – especially knowing how fast it is to make, and how good it is for you.
The best thing about it is that you can prepare it the day before and save a big bowl with chia pudding in the fridge for 3 days – then you don’t need to think about cooking in the morning, which also saves you lots of time, and gives you at least 10 more minutes to snuggle in bed (win, win!).
Another Big Plus: This is also a great recipe to make, if you are looking for some recipes you can prepare the day before, and bring with you for lunch to work.
All you need for two big jars of chia seed pudding:
Your favourite yoghurt – I use a thick low fat greek youghurt
Your preferred fruits and berries – I used strawberries and blueberries
Raw honey – I use
A tasty low sugar plum or strawberry jam. I used the delicious homemade plum jam I made a couple of days ago with my mother. Find the recipe for our plum jam here.
Dried and crunchy coconut flakes
I tend to freestyle the recipe a bit. I feel like you just got to tase it before putting it in the fridge to see if you are happy with the taste. In each jar I add approx 2-3 big spoons on greek yoghurt. I fill it with almond milk till it’s a bit more than half of the jar full and then add about 3 big table spoons of chia seeds and a squeeze of acacie honey. Then make sure to mix it well with a spoon, till the yoghurt, almond milk, seeds and honey have got one texture.
I then leave it in the fridge without fruit and jam – just like this with a lid on for a night. I find that my chia seed pudding taste better 1-2 days after. So I leave my chia pudding sometimes for 2 days, and then add the fruits etc. that I am in the mood for that day, or depending on what we have left in the fridge. Haha!
After a day or two in the fridge mix the chia pudding with a spoon. Then add your preferred fruits and jam. You can also add peanut or almond butter and a crunchy muesli. I added berries and the homemade plum jam my mother and I made the other day. Find the recipe for our plum jam here.
What Chia Seeds worth the hype?
Chia seeds consider to be a “superfood” as they offer important nutrients in just a few calories. I didn’t understand the hype till half a year ago, and I have loved it ever since. According to the National Institutes of Health, chia seeds are rich in fiber (one tablespoon provides 19% of your recommended daily fiber), essential fatty acids (omega-3 and omega-6) and antioxidants that help prevent cell damage and the omega-3 fatty acids help raise HDL cholesterol, the “good” cholesterol that protects against heart attack and stroke. They also offer protein and antioxidants and are high in calcium, iron, and magnesium (one tablespoon provides about 8% of your recommended daily amounts of these minerals). So, yes angels – it’s worth the hype and can definitely be called a superfood!
