    A little glimpse into my daily life

    Today is my birthday so lets celebrate with cake

    “Eat the cake, it’s somebody’s birthday somewhere!”

    My wonderful followers! Today is a very special day for me – as you might can tell from my headline today is not just a regular day. Today is mine and my wonderful and funny twinbother Joachim’s birthday, and words can not express how happy and lucky I feel to be back at home in Denmark with my family, so that I can celebrate the day with them. Last year I spend my birthday in Canada with Fergus and some of our close friends which was also lots of fun – but there’s nothing quite like being at home with the family on days like these. Especially since it’s my brothers day too, and it means the world to be that I get to spend the day with him.

    We have an exciting day planned for today. We are starting today with breakfast at his new beautiful house where he have invited a few friends and family over. Here in Denmark you are allowed to be up to 50 people together – but, we are only going to be a few, and I am really looking forward to it.

The weather is gorgeous today, so the dress is defiantly out – I do not know yet if I am going to go with this pink one of the green maxi I posted in yesterday’s blogpost HERE. We have to wear dresses whenever we can – because with the Danish summer wether you never know for how long it’s going to last. Haha! 

    Since today is my birthday I thought I would dedicate the blogpost to a cake recipe post. I know how much you angels love them – and especially doing this time lots of us have more time on our hands and have re-gained our passion for baking. SO – today we are going to bake gluten free carrot muffins. 

    I adore carrot cake – that and banana cake is probably my absolute favourite. I therefor thought muffins could be a good idea. They have the perfect size and they are amazing to bring with you on the go – I f.eks. love to take mine with me when I go for a walk. Then I look forward to find the perfect stop to sit and enjoy my little well deserved treat.

    I have been looking for a scale for a while, since it makes baking so much easier. This one is perfect, but is unfortunately sold out in the cream colour. Very have also got this adorable red one – and gosh it makes my baking go much  faster.

    All you need for 12 cupcakes: 

    150 g butter

    250 g grated carrots

    200 g sugar

    200 g gluten free flour – you can also use regular flour

    1,5 tsp cinnamon

    2 tsp baking powder

    2 large eggs

    120g raisins

    50 g wallnuts – optional

    It is a super yummy and easy recipe, and they were all gone within a day, haha! Which is always a good sign. I also just got the cupcake tray, it’s wonderful and the best I have ever had. You can find a direct link to it HERE.

    Step by step: 

    Preheat the oven 180-200 degrees 

    Melt the butter in a pan or in the microwave 

    Peel the carrot and grate them in a bowl

    Combine the sugar and butter with the carrots

    Sift in the flour, baking powder and cinnamon 

    Beat the eggs in a separate bowl and add to the mixture together with the raisins and the nuts

    Line your muffin tray or butter them so that your cupcakes doesn’t stick. Then device your mixture evenly between them

    Bake for about 20 minutes – Depending on the oven they might need a bit less or a bit more, so keep checking on them ad add a few extra minutes if the dough is not cooked fully. A tip would be to inset a toothpick or skewer into the center of one cupcake. If it comes out clean, they are fully baked. 

    I really hope you’ll like them! I am difinently drawing them right now, but luckily I have bakes a yummy strawberry cake for our birthday that we are going to bring with us on our picnic later today. I am super excited, and if it turns out as well as I hope for, then I will 100% share that recipe with you guys too. Have a wonderful day my dear, and enjoy your baking if you decide to give these yummy carrot cupcakes a go! A tip to make them look extra yummy would be to add some lemon cream cheese frosting. Mmm..
